We like the big boldness of ripe dark fruit that was moderately intense.  The aromas of berry, toasted oak tannins and a bit of coffee spice. Found a fair amount of balance with the acidity.  A good finish that made the wine rememberable.

57 Octaves Below Middle C” recieved its unusual name by Jason for the sound a black hole makes. The label is a distorted film photograph of a distorted horizon reminiscent to the event horizon of a black hole.  It led him "to diving into a black hole of possibilities. After months of blending trials, he, escaped the theoretical black hole with a perfect blend".

Pairing:  Lamb gyros, pizza with red sauce, Jamon Iberica, Spanish tapas and grilled salted steaks

Alcohol: 14.3%
